HaHA! Success!

So! I am terribly pleased with myself!!!
Baked Zucchini went over well ~

I covered a pan with olive oil
cut up one zucchini in thick slices
placed a layer of zucchini slices in the pan
covered the layer with ritz crackers mixed in with pepper, garlic, a hint of rosemary and oregano
covered that with spaghetti sauce out of the jar
covered that with mozzarella
repeat
bake for 30 minutes at 350

we liked the thicker slices as it cooks up "al dente" which we all agreed was better than mushy
served with penne noodles on the side
